Kay's Greek Salad
You know what I hate? I hate it when I'm at a function and I choose not to eat anything because there are no vegan options, and then someone says, "Hey Kay, they do have salad." Like...what makes you think I want that salad?
BUT OMG! If they were talking about THIS salad, I would be JUMPING all over it! How could you not love an amazing, colorful Greek salad? Papadeaux has a flavorful version of the Greek salad and I wanted to make sure mine was the TRUTH!

I did some research and discovered a lot of things I didn't know before. I learned that SEA SALT is the preferred salt for making the traditional Greek Salad and I also learned that the proper way to cut your tomatoes for this salad is into big moon-shaped chunks.

I'm also a HUGE fan of feta cheese, so I was so excited to find a vegan version that tastes EXACTLY like the dairy kind.
Kay's Shopping List
1 cucumber
3 Roma tomatoes
1/2 large Red Onion
1 Green Bell Pepper
Leafy Greens
Kalamata Olives

Greek Dressing:
Sea Salt to taste
1 teaspoon dried oregano
3 Tablespoons Olive Oil
