Kay's Jackfruit Enchiladas

I'm from Houston, so Mexican food has always been one of my favorites. Not having enchiladas in my life since I changed my died KILLED me LOL. That's why it was so important for me to create a recipe that will fulfill my enchilada needs! I hope this recipe is just as fun to you and it was to me.

Enchilada Sauce:

 

3 tsp Apple cider vinegar

2 tsp cumin

1 tsp oregano

2 tsp salt

1 tsp white sugar

2-3 garlic cloves (roughly chopped)

1/2 large sweet onion (roughly chopped) 3 dried ancho chiles 2 (14.5 oz) cans of roasted, diced fire tomatoes

JACKFRUIT MIXTURE:

​

2 cans of Jackfruit

1/2 white onion sliced

1 Red Bell pepper sliced

Queen Chef's Kingdom Come seasoning 

1/3 cup of the sauce

2 packs of Daiya Cheddar and Mozza Style Blend Cheese 20 Corn Tortillas

oil for frying (I use grape seed oil)

 

OPTIONAL: Cashew Cream/ Vegan Sour Cream:

 

1 cup soaked raw cashews

1/2 squeezed lime juice

3/4 cup non-dairy milk salt to taste
