Kay's Potato Flautas

You know what's so good? POTATO FLAUTAS!  I'm from TEXAS and in Texas you can always find a spot that makes delicious flautas.  When I has potato flautas for the FIRST time, I was amazed at how wonderful they taste.

I decided to macke my own and fell in love with them.  I couldn't  believe I made something so GOOD and so CUTE. 

​

This dish can be a lot of WORK, but it is so worth it. After you make it a couple of times you'll be a pro at making them quickly. 

​

 

Toppings:

​

1 bunch of cilantro

​

3 diced roma tomatoes

 

Potato Filling:

​

3 diced russet potatoes boiled

 

2 teaspoons paprika

 

1 tablespoon of dried parsley

 

1 tablespoon butter

 

1/2 lime juice

 

Salt to taste

 

Cashew Cream/ Vegan Sour Cream:

 

1 cup soaked raw cashews

 

1/2 squeezed lemon juice

 

3/4 cup non-dairy milk

 

salt to taste

 

Spicy Cashew Cheese:

 

1 cup soaked raw cashews

 

1 teaspoon cayenne pepper

 

3/4 cup non dairy milk

 

salt to taste

 

Guacamole:

 

3 avocados 1/2 lime juice

 

Salt to taste
